Sauce vierge
Sauce vierge, translating to virgin sauce is a French condiment made with chopped tomato, olive oil, lemon juice and basil.
Many variations exist with poular additional flavours such as orange zest, tarragon, fennel, crushed coriander seed, chives and parsley.
Traditionally served with shellfish, Sauce Vierge blends itself to white flesh fish, and lighter seafoods.
