Duxelle
Duxelle, or Mushroom Duxelle is a finely chopped mixture of mushrooms, shallots, garlic and herbs sautéed in butter to create a fine mushroom paste.
Sometimes to maximise flavour the mushrooms are part dehydrated to remove moisture thus concentrating flavour. Mushroom Duxelle is often used to stuff meats, as a filling for pasta or as a garnish to a dish.
