Ceviche
The dish is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, salt and spiced with garlic or chilli peppers. Often seasonings such as chopped onions, salt, and cilantro are added and in the Caribbean the use of coconut cream sweetens the fish.
Often referred to as ‘Raw’, the acidity of the lemon or lime and the sodium from the salt actually ‘Cure’ the fish, thus meaning the fish is actually lightly cooked.
