Caponata
Caponata is a traditional Sicilian preparation, comprising of stewed Aubergine (eggplant) onions, garlic, olive oil, capers or olives and finished with a sweet vinegar to create a sweet and sour taste.
Often Caponata variations may include courgette (zucchini), capsicum, celery, carrot and tomato paste.
Most commonly Caponata is served as a side dish or as an accompaniment to a dish in place of a sauce.
