Bouillon
A Bouillon is a broth or vegetable stock made from root vegetables. The Bouillon is simmered with herbs and spices, then to be used to prepare a soup.
Traditionally the term Bouillon refers to a beef stock, the term court-bouillon referring to a fish stock.
The term Bouillon is more loosely used these days as the stock can be used as a sauce, for rissottos, braises, soups etc..
