Boudin Blanc; Classically a white sausage made from pork with no blood. Boudin Blanc simply meaning white sausage, can refer to number of culinary creations such as a; Fish mousse, Chicken or ground Veal, shaped as a sausage and prepared in a fashion keeping it’s ‘Blanc’ or ‘White’ colour with the use of milk, cream and/or light cooking methods.
